Is No More Ply safe to use in wetroom installations?

In wet rooms you advise using No More Ply.

However, this is water resistant not waterproof?

That is quite right, however its important to remember that the products that you install over the top of the No More Ply, ie: adhesive, tiles, grout and sealer, more than provide a barrier against the passage of water.
